We started phone conversation yesterday with my relative. How are you? He said everything is great here, we are all good. Then after few minutes he said that he is staying at home out of work due to stress. His blood pressure was going very high and he couldn't cope anymore, so the doctor advise him to be home for three weeks. He is a manager in the very big car company. As we talked further he said he is contemplating his life and realised he was and is chasing work, work, work all the time but inside he is empty.  He came to the point of having everything that people consider is needed for happy life. Big house, great salary in the secure company, wife, kid, car...but he is not happy. He is in his 30ties. His condition is like that, that he need to use mask at night to sleep, cause he can't properly breathe without it. And it is all due to stress. Madarica without Eggs and milk (Madarica bez jaja i mlijeka)

This recepie is the one my mother in law brought from her family in Bosnia.  On the Island of Ugljan in Croatia where Im from in the village of Kali this cake of my mother in law is the most well known. It is that popular that she bake it for almost every village wedding! Ingredients: 600 g flour of your choice 50 g nutelex 150g sugar 1 Ts baking powde 1/2 Ts sodium bicarbonate 6-7 Tbs Toffuti or water or almond milk. Filling: If you visit some European Deli shop and buy Pudding powder you don't need this. You will just have to put powder in 500ml of water or coconut milk and boil it for few minutes. That is what I have done. I bought some German brand pudding powder. If you don't have it use this recepie: 100 g Cacao powder 250g sugar 1L Almond or some other milk 6 Tbs flour 250g nutelex Chocholate top: 200g nutelex 200g dark chocholate Preparation: 1. This is the cake of my childhood. We call them Cupavci in Croatia or Spiky heads. This one is made with GF flour but you can do it with normal one too. It is good and spongy inside💞🤗: Ingredients: 30 Tbsp Gluten free flour 17 Tbsp sugar (raw or coconut sugar) 25 Tbsp oil ( sunflower or coconut) 35 Tbsp water or coconut, soy.. milk 1 Tsp baking powder 1 Tsp sodium bicarbonate 1 Tbsp apple cider vinegar 2 Tbsp flaxseed meal Coating mix: 200 gr shredded coconut 50gr cacao powder 1,5 dl water 200 gr nutelex vegan margarine 150gr sugar Preparation: Mix togeather flour, baking powder and sodium bicarbonate.  Add oil, water, sugar, vinegar and flaxseed meal. Bake on 180C for 15-25 min. Let it cool and cut on squares. Chocholate dipping sauce: In a medium size pot put water, cocoa powder, sugar to boil.Add chocolate and nutelex. Dip the squares of cake in chocolate mixture then coat in shredded coconut. Bon Appétit

This recepie is great as a entrée or main dish serve with rice and salad. It is very delicious and I will definitely cook it again🤗💖 Fried Beancurd in savory syrup   Ingredients: 3 cakes firm bean curd 3 tbs oil 3 shallots, sliced 1 small dried spur cholli, sliced 1/4 cup palm sugar or brown sugar 1/4 cup tamarind juice 1/4 cup soy sauce Coriander Preparation; Wash and cut bean curd into quarters. Fry separately the shallot, garlic, chilli and set aside. Fry the bean curd until golden in the oil which the shallots were fried. Return the pan to the heat and to the remining oil add sugar, tamarind and soy sauce. Cook with regular stirring until thick. Put the curd on the plate pur the syrup over it and sprinkle fried garlic, shallots and chilli. Garnish with coriander .
