Vegan Gluten Free Lamingtons

This is the cake of my childhood. We call them Cupavci in Croatia or Spiky heads. This one is made with GF flour but you can do it with normal one too. It is good and spongy inside💞🤗:

Ingredients:

30 Tbsp Gluten free flour
17 Tbsp sugar (raw or coconut sugar)
25 Tbsp oil ( sunflower or coconut)
35 Tbsp water or coconut, soy.. milk
1 Tsp baking powder
1 Tsp sodium bicarbonate
1 Tbsp apple cider vinegar
2 Tbsp flaxseed meal

Coating mix:

200 gr shredded coconut
50gr cacao powder
1,5 dl water
200 gr nutelex vegan margarine
150gr sugar

Preparation:

Mix togeather flour, baking powder and sodium bicarbonate.  Add oil, water, sugar, vinegar and flaxseed meal. Bake on 180C for 15-25 min.
Let it cool and cut on squares.

Chocholate dipping sauce:
In a medium size pot put water, cocoa powder, sugar to boil.Add chocolate and nutelex.

Dip the squares of cake in chocolate mixture then coat in shredded coconut.
